This non-carbonated mead pours very pale yellow, like a viscous green tea in the glass. The aroma is intense, with alcohol, thistle flowers, dry grass, honey, and a considerable level of spiciness. The flavors are equally intense, savory in their herbal and wildflower qualities. The mead begins with an explosion of sweetness, with a faint pineapple that is short-lived, followed by apricot and peach flesh tastes that linger. This mead has a thick, heavy texture and finishes quite dry.
Food Pairings: Pairs nicely with blackened fish, chicken, pork, curry, Thai cuisine.
We are an award winning winery that makes world class honey wine (Mead). Experience the worlds first fermented beverage and taste how delicate, complex and pleasing the ‘nectar of the gods’ can be.
A little bit about the bottles: An interesting thing about this mead is the unique swing top caps. You probably have seen these old fashioned swing tops and they are a good choice for mead because they keep a good seal on the bottles yet they are easy to un cork and easy to re-seal so you don't have to drink the whole bottle in one evening. You can put it away and have more on another day. This swing top is a nice addition to the mead experience.
